Soya Chunks - an absolute protein packed nutrition for us vegetarians!! That’s right! The nutritional value in these soya chunks is similar to meat. Soya chunks are made from soy beans and they work well as meat substitutes. These come in the form of regular chunks, mini chunks and granules, and can be used in many ways. I usually love and prefer using small soya chunks to most of my recipes, as it looks good, gives the right feel of chewiness, a proper thin layer of crunch and ends up delightfully scrumptious..



Soya chunks are easy to use and quick to prepare. Kids love them for its unique look and texture. As it has high source of nutrition, you can make any type of healthy recipes using these chunks. Just make sure that no one is allergic to soya..

At home, we always prepare something made from soya chunks every once in a week, mostly as a side dish to be had with rice. I would love to share some of my recipes on soya chunks and granules, posting them shortly..


This homemade recipe is made with North Indian spices and flavors, which is a thicker form of gravy, and can be had with tandoori rotis, naan, kulcha, chapattis and even plain parathas. Do try this at home and let me know how this healthy nutritious recipe came out for you.


Soya Masala Gravy Recipe


Ingredients: (serves 2)

· Soya chunks ½ cup (soak in hot water for 5 mins, drain water, squeeze the excess water from the chunks and keep it aside)


· Tomatoes ( chopped big cubes) – 2 medium sized- pureed


· Onions (chopped big cubes) 1 medium – pureed


· Ginger garlic paste 1 tsp


· Onion (chopped in small pieces) 1 medium


· Garlic ( 6 to 8 cloves)


· Turmeric powder – a pinch


· Chilly powder ½ tsp


· Coriander powder ¼ tsp


· Jeera (cumin) powder ¼ tsp


· Garam masala powder ¼ tsp


· Curd 1 tbsp


· Coriander leaves (chopped) 2 tbsps.


· Salt – as per taste


· Oil 1 tbsp.




Method of preparation

Step 1:

Fry soya chunks in a pan with little oil. This is to form a slight crispy layer and also removes the raw smell of soya chunks. Keep it aside.


Step 2:

In a pan add oil, add garlic cloves (chopped), chopped onions, fry till they turn light golden brown. Add ginger garlic paste and fry. Let your kitchen fill with aroma.


Step 3:

Now add onion paste (pureed), fry for sometime till it changes color. Add turmeric powder, jeera powder, coriander powder and chilli powder. Add tomato puree and let it boil. You can add little water. Add curd.


Step 4:

Add soya chunks, add garam masala and salt. Cook for some time for about 5 mins in low heat.


Step 5:

Switch off the flame and garnish with coriander leaves. Serve hot with chapattis or rotis of your choice.


Tips:


1. This side dish can also be relished with plain rice.


2. Want to have more gravy in this recipe? Just add in extra tomato puree and a little extra curd with extra spices. It’s ready.


3. I recommend serving this recipe hot. Soya chunks are best had when it is hot.
